Not only is Beet wine a “good thing” it is a way to turn some of your extra crop into barter goods in a SHTF situation. My Mother always added a little bit of lemon juice (to your taste) to the recipe below. But warning this is definitely an adult beverage and can get quite strong!

10 medium beets
1 gallon water
2 1/2 lbs sugar
1  cake yeast
 1/4 teaspoon pepper

1 Pare and quarter beets.

2 Boil in water till tender.

3 LET STAND 24 HOURS.

4 Remove beets.

5 Add enough water to make one full gallon of liquid.

6 Add sugar and pepper.

7 Boil 10 minutes.

8 Strain through cloth into clay crock (dark glass works too just not plastic nor metal containers)

9 Spread yeast on a slice of bread which has been thoroughly dried in the oven.

10 Place in lukewarm liquid.

11 Let ferment 10 days.

12 Bottle

13 Do not cork tightly.

14 Allow to sit and rest in a dark cool place for at least 2 days prior to testing
(The longer it sits, the stronger it gets!)

15 Enjoy responsibly!
