Freezing Cucumbers

If your harvest of cucumbers is anything like ours, you will be swimming in cucumbers! It’s not an issue here as I am a firm believer that you simply can’t have too many pickles! So if you are tired of cucumber salads, had enough fresh, and impossibly feel you have enough pickles… you may want to have another way to preserve them for when they aren’t as plentiful.

Have you considered freezing them? I admit in part due to my love of pickles, that I didn’t know you could freeze cucumbers! I assumed they became too mushy for use. I won’t kid you and say you will want a ton of frozen or that they can be used the same as fresh. But there are things that work well with frozen cucumbers.
