One of the best and the most frustrating part of fresh onions and garlic is their freshness! Growing them yourself is amazing when you want a fresh slice or clove. But when the harvest is ready to bring in unless you have set aside the day to process and prep it to be frozen, canned, or dehydrated right away. You lose that freshness and even if you can and do, do it all at once you miss out on the ease and special right from the garden taste of fresh onion and garlic. Not only does this give you more time to make long term storage arrangements but a longer time during which you can simply enjoy it fresh from the garden.
